16O9 Restaurant Re-Opens: Chef de Cuisine Oscar Trejo Brings Latin Flair To The Menu

News Release: HAMILTON, Bermuda – Today, seasonal restaurant 16O9 re-opened with a newly inspired menu, at Hamilton Princess & Beach Club.

Diners will experience a taste of Latin America with new small plates Choripan, which is a sourdough baguette with Argentinian-style Chorizo sausage, melted mozzarella cheese and oregano chargrilled, and topped with chimichurri. The veggie empanada, filled with corn, onion, mozzarella and Poblano peppers, is a tasty delight for non-meat eaters.

Flatbread lovers will enjoy the newly featured Pozole option; topped with the pork braised from the Pozole soup, garnished with red onion, cheese and radish. Taco fans will love the Baja-style Rosarito Fish taco with a crispy batter crust, spicy aioli, cabbage salad and refreshing tomatillo sauce.

16O9 Restaurant’s Chef de Cuisine, Oscar Trejo, said: “The menu guarantees fresh, flavourful food. The key ingredient in each dish is garlic and seasonings, and some items will have chilies. Not every dish is spicy, though it will be tasty.”

Some of Chef Oscar’s must try dishes at 16O9 are the vegan Roasted Portobello Ceviche, the Charred Octopus with corn puree, Cauliflower Al Pastor, Roasted Snapper with Mama Trejo’s Rice, the Braised Beef Empanada and our signature Guacamole with grilled watermelon.

Popular items from the previous menu include the Golden Fried Shrimp, and the Piri Piri Chicken Wings.

Roasted Snapper

Pairing well with the festive menu, a new cocktail called the Mango Sriracha Margarita, has a base of blanco tequila, mango nectar, lime juice, sriracha chilli sauce and salt. Well-liked tequila and mezcal drinks from the existing menu, include the Flor de Bermuda, Tequila Cucumber Mule, the Mexican, as well as 16O9 Classics: the Mango Lemon Drop, Pineapple Crush, and the Hand-Shaken Bartender’s Colada.
